This one has a traditional onion head, hand-formed from 100% copper at least 1.0 mm thick, and every union is sealed with lead-free tin-silver solder. There's no lead and no brass, just copper doing what copper has done in stills for centuries.
Why step up to a 4 gallon onion head still?
More volume in the pot means a longer run and more time to watch it change, from the first drops through to the tails. That gives you room to practice your cuts, and this is where the scientist in you takes over. Note the temperature, judge the aroma, write it down, and adjust next time.
